Update: Brick Store Pub and Leon's Full Service



I recently had a chance to talk briefly with Micael Gallagher, one of the owner/managers of The Brick Store Pub and Leon's Full Service (both in Decatur). We had a brief chat (he was very busy) about the green practices of both stores, and he promised me an email explaining what they do to remain as earth-friendly as they can. I got the email shortly afterward, but have been awhile posting it (sorry, Michael).

Michael:

So here's the deal at both places:

We are Styrofoam free at both places.

We use water free urinals at both places.

We purchase from local farms at both places and will probably be able to purchase more via LEONs. We purchase from Love is Love Farm, Whippoorwill Hollow Farm, Riverview Farms, White Oak Pastures Beef, Sweet Grass Dairy and a few others on occasions.

We're sourcing almost all of our fish and our scallops at LEONS from the East Coast and trying hard to go as close to home with the quality we desire. I even have a Rose wine from Cartersville, VA on my list. It's quite good.

With our beer we're trying to balance all the great Belgian stuff with great US beer and a lot from the Southeast. Terrapin, Highland, Duck Rabbit, Red Brick, Sweetwater, etc.

We do have the corn-based bio-degradable to-go cups and boxes.

At Brick Store we re-use waste paper in lieu of cocktail napkins for our soup/stew/coffee presentations; i.e., waste paper goes under the cup, not a cocktail napkin.

We're working on composting for both restaurants but haven't made that happen yet.

Oh, and we do use Rob del Bueno's grease company to pick up our grease and he uses it to make biodiesel.

We plan to follow up with the other restaurants we've visited as well, because we want this blog to be as accurate as humanly possible. If you read an account of a restaurant here that you know to be wrong, let us know. We'll look into it and correct whatever needs correcting. We want you all to be able to find good food, done right.
